Homemade Grass Jelly

Grass jelly has a mild herbal flavor and is commonly paired with milk tea, black tea, and dessert-style drinks. For a practical home version, use prepared grass jelly powder or a packaged herbal grass-jelly concentrate according to its label, then set it into cubes.
Ingredients
- Grass jelly powder or grass jelly concentrate, enough for about 2 cups prepared jelly
- Water, according to package directions
- Sugar, optional and to taste
Step-by-step instructions
1. Prepare the mixture.
Combine the grass jelly powder or concentrate with water according to the package directions.
2. Sweeten lightly if desired.
Add only a small amount of sugar if the product is unsweetened.
3. Heat as directed.
Cook according to the package instructions until the mixture thickens or reaches the required boil.
4. Pour and chill.
Pour into a shallow container and refrigerate until fully set.
5. Cut into cubes.
Slice into small cubes for boba-style drinks.

Wolf Ember tip
Grass jelly has a more earthy, herbal profile than fruit jelly, so it works best with stronger teas and roasted flavors.
