Homemade Coconut Jelly Cubes

These are simple agar-based coconut jelly cubes for adding to tea, milk tea, tropical refreshers, and boba-style drinks. This is different from fermented nata de coco; it is a quick homemade jelly with a soft, clean coconut flavor.
Ingredients
- 1 cup coconut water
- 1/2 cup coconut milk
- 1 to 2 tablespoons sugar, to taste
- 1 1/2 teaspoons agar-agar powder
Step-by-step instructions
1. Combine the ingredients.
Add the coconut water, coconut milk, sugar, and agar powder to a small saucepan and whisk well.
2. Bring to a boil.
Heat over medium heat, whisking frequently. Once the mixture reaches a full boil, continue boiling for about 1 minute.
3. Pour and chill.
Pour into a shallow container and refrigerate until firm, about 1 hour.
4. Cut into cubes.
Slice into small cubes sized for a wide boba straw.
