Hibiscus Berry Sparkling Berry Refresher

A bright, jewel-toned iced tea refresher with tart berry flavor, fresh fruit, and a sparkling finish. It is refreshing, colorful, and easy to adjust depending on how sweet or tart you like your drinks.
Ingredients
- 2 teaspoons Wolf Ember Hibiscus Berry tea, or the amount recommended for one strong cup
- 3/4 cup hot water
- 1/2 cup chilled sparkling water
- 1 to 2 teaspoons raspberry or strawberry syrup, optional and to taste
- 1/4 cup fresh berries, such as strawberries, raspberries, or blackberries
- 1 cup ice
- Optional: squeeze of lime or lemon
- Optional: mint leaves for garnish
Step-by-step instructions
1. Steep the tea.
Add the Hibiscus Berry tea to 3/4 cup hot water and steep according to the package directions. Brew it slightly stronger than usual so the flavor stays bold after the ice and sparkling water are added.
2. Cool completely.
Let the tea cool to room temperature, then refrigerate until cold.
3. Prepare the berries.
Add a few fresh berries to the bottom of a tall glass and gently press them once or twice with the back of a spoon. Do not fully mash them.
4. Add the tea.
Fill the glass with ice, then pour in the chilled Hibiscus Berry tea.
5. Taste and adjust.
Taste before adding syrup. If you want more sweetness, add raspberry or strawberry syrup a little at a time. If you want more brightness, add a small squeeze of citrus.
6. Add the sparkle.
Top with chilled sparkling water and stir gently.
7. Garnish and serve.
Add extra berries or a few mint leaves if desired. Serve immediately.
Pitcher version
For four servings, use 8 teaspoons Hibiscus Berry tea, 3 cups hot water, 2 cups chilled sparkling water, 1 cup fresh berries, and syrup to taste. Chill the brewed tea completely and add the sparkling water just before serving.

Hibiscus can be naturally tart, so taste the tea before sweetening it. Fresh berries can add both sweetness and flavor without needing much syrup.
