Hibiscus Berry Jelly Cubes

A bright, tart berry jelly that pairs especially well with Wolf Ember Hibiscus Berry and other fruit-forward iced teas.
Ingredients
- 1 cup strongly brewed Wolf Ember Hibiscus Berry tea
- 1/2 cup berry juice, such as raspberry, strawberry, or mixed berry
- 1 to 2 tablespoons sugar or honey, to taste
- 1 1/2 teaspoons agar-agar powder
Step-by-step instructions
1. Brew the tea strong.
Steep the Hibiscus Berry tea slightly stronger than usual.
2. Taste before sweetening.
Hibiscus can be naturally tart, so taste the tea and berry juice together before deciding how much sweetener to add.
3. Combine.
Add the tea, berry juice, sweetener, and agar powder to a saucepan and whisk well.
4. Boil.
Bring to a full boil and continue boiling for about 1 minute while whisking.
5. Pour and chill.
Pour into a shallow container and refrigerate until firm.
6. Cut into cubes.
Slice into small cubes.
