English Breakfast Brown Sugar Grass Jelly Milk Tea

A classic-style black milk tea with Wolf Ember English Breakfast, brown sugar, and cool grass jelly cubes. It is earthy, creamy, and less chewy than tapioca boba while still giving the drink plenty of texture.
Ingredients
- 3/4 cup strongly brewed Wolf Ember English Breakfast tea, chilled
- 1/2 cup milk of choice
- 1/3 cup Homemade Grass Jelly, cut into small cubes
- 1 to 2 tablespoons brown sugar syrup, to taste
- 1 cup ice
- Optional: 2 tablespoons cooked brown sugar boba for a mixed-topping version
Step-by-step instructions
1. Brew and chill the tea.
Prepare the English Breakfast slightly stronger than usual and chill completely.
2. Add the grass jelly.
Place the grass jelly cubes in the bottom of a tall glass.
3. Add ice and tea.
Fill the glass with ice and pour in the chilled tea.
4. Add milk.
Pour in the milk and stir gently.
5. Sweeten gradually.
Add 1 tablespoon brown sugar syrup, taste, and add more only if needed.
6. Add boba if desired.
For a mixed-topping drink, add a small spoonful of brown sugar tapioca pearls along with the grass jelly.
7. Serve.
Stir well and serve with a wide straw.
Wolf Ember tip
Grass jelly has a mild herbal flavor, so it pairs best with a stronger tea like English Breakfast. Using both grass jelly and boba gives the drink two different textures without needing extra flavor syrups.
