English Breakfast Brown Sugar Boba Milk Tea

A café-style milk tea built around strong Wolf Ember English Breakfast tea, creamy milk, brown sugar, and chewy tapioca pearls. English Breakfast is actually a very good choice for boba because its bold black-tea flavor can stand up to milk, ice, and brown sugar without disappearing.
Ingredients
- 2 teaspoons Wolf Ember English Breakfast tea, or the amount recommended for one strong cup
- 3/4 cup hot water
- 1/2 cup milk of choice
- 1 to 2 tablespoons brown sugar syrup, to taste
- 1/3 cup cooked tapioca pearls
- 1 cup ice
- Optional: extra brown sugar syrup for coating the glass
For the brown sugar syrup
- 2 tablespoons brown sugar
- 2 tablespoons water
Step-by-step instructions
1. Brew the tea strong.
Steep the English Breakfast tea in 3/4 cup hot water according to the package directions. Brew it a little stronger than usual so the black-tea flavor remains noticeable after the milk and ice are added.
2. Make the brown sugar syrup.
Add the brown sugar and water to a small saucepan. Warm over low heat, stirring until the sugar dissolves and the mixture becomes slightly syrupy. Remove from the heat and let it cool.
3. Prepare the boba.
Cook the tapioca pearls according to the package directions. Once cooked, drain them and toss them with a little of the brown sugar syrup so they stay sweet and glossy.
4. Cool the tea.
Let the brewed tea cool to room temperature, then chill it in the refrigerator.
5. Build the drink.
Add the boba to the bottom of a tall glass. If desired, drizzle a little brown sugar syrup around the inside of the glass. Fill the glass with ice.
6. Add the tea and milk.
Pour in the chilled English Breakfast tea, then add the milk.
7. Sweeten gradually.
Add 1 tablespoon of brown sugar syrup, stir well, and taste. Add more only if you want a sweeter drink.
8. Serve.
Stir well before drinking and serve with a wide boba straw.
No-boba version
For a simpler Brown Sugar Milk Tea, leave out the tapioca pearls and prepare the rest of the recipe the same way.
